Koji Saryo Cafe

Koji Saryo Cafe is an innovative interior design project that exemplifies the harmonious fusion of traditional Japanese fermentation culture with contemporary spatial design principles. Located within a luxury resort and shopping complex in Mie Prefecture, this specialized cafe celebrates the art of koji (fermented rice) production through its thoughtfully curated architectural elements and design features. The space's conceptual foundation draws inspiration from the dynamic process of koji fermentation, particularly the living warmth generated during the fermentation process, which becomes manifested through a carefully orchestrated sequence of color transformations throughout the interior. The design, created by Maho Sakuma, pays homage to the traditional architecture of Uonuma while incorporating modern design sensibilities. A distinctive feature of the space is the strategic placement of a symbolic red element at eye level in the center of the store, creating a striking visual contrast that intensifies the visitor's experience upon entry. The cafe's design narrative extends beyond mere aesthetics, serving as an educational platform that showcases the cultural significance of amazake (a sweet fermented koji drink) and other koji-based products. The thoughtful integration of materials, colors, and forms creates an immersive environment that reflects the living, breathing nature of fermentation processes. This exceptional design approach earned the project a Bronze A' Design Award in the Interior Space, Retail and Exhibition Design category in 2022, recognizing its innovative use of space and cultural relevance. The cafe's design successfully balances functional requirements with artistic expression, creating a unique destination that elevates the traditional koji experience through contemporary design language.
