Bakers’ Bread Baskets

Bakers’ bread baskets are an essential tool for professional bakers and pastry chefs. These baskets, also known as proofing baskets or bannetons, are used to support the dough during the final stages of proofing before baking. The baskets are typically made from natural materials like cane, wicker, or rattan, which allow the dough to breathe and prevent it from sticking to the sides of the basket. The use of bakers’ bread baskets dates back to ancient times, when bread was baked in communal ovens and proofed in baskets made from woven straw or reeds. Today, bakers’ bread baskets are still widely used in artisanal bakeries and pastry shops, where they are valued for their ability to create a consistent shape and texture in the finished product. To use a bakers’ bread basket, the baker first dusts the inside with flour to prevent the dough from sticking. The dough is then placed inside the basket, seam-side up, and left to proof for a period of time, usually between 30 minutes and several hours, depending on the recipe. During this time, the dough rises and takes on the shape of the basket. When the dough is ready to be baked, the baker carefully turns the basket over onto a baking sheet or stone, releasing the dough onto the surface. The bread is then baked in the oven, where it develops a crispy crust and a soft, chewy interior.
