Kaedama Restaurant is an innovative Asian noodle bar concept located in Newark Airport's Terminal C, distinguished by its remarkable architectural and experiential design elements that revolutionize traditional airport dining. The establishment's most striking feature is its monumental forty-foot sculptural centerpiece, conceived as an abstract golden noodle wrapped in a sophisticated hand-woven LED mesh incorporating 17,000 interconnected lights that create dynamic visual displays. Drawing inspiration from European town square clock towers, this Gold A' Design Award-winning restaurant design elevates the airport dining experience through its theatrical approach to spatial design and culinary presentation. The restaurant's layout features an elevated chef's platform positioned directly beneath the sculptural installation, where culinary artisans demonstrate the art of fresh noodle-making, surrounded by a sophisticated six-point star-shaped counter that accommodates 42 diners. The counter's design incorporates premium materials including wood, leather, and metal, creating an elegant dining environment. The LED media mesh installation operates in two distinct modes: an ambient mode displaying subtle color gradients and kaleidoscopic patterns, and a spectacle mode featuring Japanese-inspired imagery including samurai and drifting clouds. The restaurant's technological integration extends to the dining experience through tablet-based ordering systems that provide menu visualization, entertainment options, and real-time flight information. The project overcame significant technical challenges in its implementation, requiring dual construction phases to ensure proper fitting within the terminal space, and extensive testing of the LED system's performance under varying lighting conditions.
